What flour do you use for your sourdough bread?

This is really inspiring me to think of getting a flour mill! The one you have is GORGEOUS! It’s pricey but with my daughter (who’s almost 1) I love the idea of having fresh baked goods for her as well! I would love a benefits deep dive! And more recipes with freshly milled flour!

If only there were any mills in stock. I have looked everywhere! I have a steel mill that I currently use, but would love to upgrade to a stone mill.

Really solid breakdown of the industrial flour problem. The connection between nutrient stripping and those specific deficiency diseases is somethign most people miss when they talk about modern food quality. I've actualy noticed better blood sugar control since switching to fresh milled, probablythe thiamine content working as intended.
