The Best Ancestral Banana Bread Recipe (Sourdough + Fresh Milled Flour)
This banana bread banana BREADS. It’s actually the best banana bread ever- WHILE being a total superfood. (not kidding, it does not taste like a health food at all)
I am absolutely obsessed with how nutrient dense fresh milled flour from ancestral grains taste & their benefits. The nuttiness & rich flavor of real flour compliments this bread perfectly, and they give me so much energy (hello, thiamine + b vitamins!) and having this alongside my morning 30g protein raw milk + gelatin matcha latte was a dream Sunday morning.
PS: should I do an entire post on the benefits of fresh milled flour? I have been obsessed and it’s so underrated.
That, with the combination of sourdough breaking up to 97% of the gluten and antinutrients, makes this bread incredible for digestion and it’s exactly how we’re meant to eat bread (it was the only option pre invention of instant yeast in the 1900s! It’s no wonder we all have gut issues now)
So let’s get into it, shall we?
The Best Banana Bread Recipe
Ingredients:
4 ripe bananas
1/3 cup grassfed butter
1/2 teaspoon baking soda
1 pinch sea salt
3/4 cup organic cane sugar
1 large pasture raised egg,
1 teaspoon vanilla powder
1 1/2 cups fresh milled flour (I used spelt from Grand Teton, but most mild grains work!)
1 tbsp sourdough discard
1/3 tsp ceylon cinnamon
Instructions
Mash bananas and butter in a bowl
Mill your flour. Sift it into your bowl to remove the chunkiest bran (this turns it into a whiter nutrient dense ancestral flour)
Add the rest of your ingredients.
Allow to sit for 4 hours (or in the fridge overnight) (*if you’re short on time you can bake it immediately, however the benefits of sourdough take a few hours to develop. The bread itself would taste the same!)
Preheat oven to 350
Bake for 55-60 minutes.
Let cool & enjoy (I love it with a slab of grassfed butter, a pinch of sea salt, and a coffee or matcha latte!)

Raw milk and fresh milled bread… probably the best and tastiest combo there is! Banana bread was one of the first fresh milled recipes I tried, but I haven’t added sourdough to it yet! I’ll give your recipe a try! Thank you!
